Italian Eggplant Parmesan Recipe

Instructions:


1. Preheat the saucepan and add in 1 tablespoon of olive oil. Add in the beef and garlic then saute them until the beef is browned.


2. Add in the basil, boillon, tomato paste, oregano, salt and pepper. Combine and stir well then let it cook over low heat for 25 minutes.


3. In a bowl, add in the bread crumbs and in another bowl, add in the beaten egg. Dip the eggplant slices into the beaten egg mixture and coat it with bread crumbs.


4. Preheat another saucepan and add in 2 tablespoons of olive oil. Brown the coated eggplant slices.


5. In a casserole dish, place in layers of eggplant and cover it with Mozzarella cheese, meat sauce and Parmesan cheese. Repeat layers.


6. Bake it at 350°F (204°C) for 40 minutes.


7. Serve and enjoy!
